Cobbler, Crisp, and Slump Recipes

Pies aren’t the only baked fruit desserts

Nothing is as simultaneously simple and satisfying as a baked dessert made from ripe fruit, warm and bubbly from the oven. Pies are classic, of course, but the fun doesn't have to end there. If you want to mix things up, we've collected our favorite cobbler, crisp, and slump recipes.

The cobbler is a classic dessert of fruit topped with a biscuit dough or batter and then baked. We love blueberry-cherry cobbler flavored with cinnamon and almond extract and covered with big scoops of biscuit dough. While fruit is traditional for topping a cobbler, come fall try making it with sweet potatoes flavored with nutmeg.

If you live outside of New England, you probably have no idea what a slump is. This strangely named relative of the cobbler is also made by cooking biscuit dough on top of fruit. It's delicious made with blueberries and citrus juice and topping generously with vanilla ice cream. Our blackberry slump is a variation on that technique, with the berries mixed with white wine and spooned on top of the batter in individual ramekins. In either form, the dessert is a delicious treat.

While cobblers and slumps are topped with a biscuit dough, crisps are topped with a topping similar to streusel, generally made of sugar, flour, butter, and often oats. Our blueberry crisp keeps it simple so as to let the sweet flavor of ripe blueberries shine. In our wine-poached rhubarb crisp, the bold flavors of the fruit are matched with a topping containing orange zest, cardamom, and poppy seeds.
