Puerto Rico's experience of producing the world's finest rum goes back more than 450 years, to the arrival of sugarcane held by Spanish explorers and conquistadors. In the early 1800s, a Spanish wine merchant named Facundo Bacardi emigrated to the region and set out to tame rum's wild and exotic reputation. After experimenting with several filtration methods, he incorporated active charcoal to create a new clear, or "white rum," that was then aged in oak barrels to mellow and enhance its flavor. This lighter style of rum continues to be among the most popular on the island today.
