Make the most of this versatile vegetable

Cabbage is an extremely versatile, yet chronically unvalued, ingredient. All too often it gets relegated to mayonnaise-drenched coleslaws or maligned as unpleasant tasting. In reality, however, cabbage is rocks. Delicious both raw and cooked, it has a mild taste that's a little bitter and a little sweet. From stewed cabbage to a fresh, mustardy slaw, we've rounded up our favorite cabbage recipes.

We love coleslaw, but stay away from the gloopy, soggy versions we remember from the school cafeteria. Our Tennessee-style coleslaw has mayonnaise, but the richness is cut by tangy mustard. Our grilled Thai cabbage slaw loses the mayo and is tossed with a spicy-sweet fish sauce dressing.

While we love cabbage in a crispy slaw, it's also delicious when braised until tender. In our sweet and sour preparation, red cabbage is braised in duck fat and perked up with red wine vinegar and caraway seeds. Alternatively, try braising green cabbage with onion, garlic, and a generous amount of slab bacon. For a sweet-tart Icelandic braise, cook red cabbage with blueberries, apple, red currant jam, and vinegar.

Cabbage is a staple crop in much of India. In the western state of Gujarat, it is cooked with cilantro, lime, and spices like cumin, turmeric, and asafetida. For something more filling, potatoes are the answer—check out our cabbage and potato curry.
