Roasted Peaches in Bourbon Syrup with Smoked Salt from Mark Bitterman’s Salted

In describing this dessert, Mark Bitterman predicts, "Your first bite will expand the boundaries of sensation separating your mouth from the rest of your body, and you'll be feeling spiciness in the warmth of your hands and smokiness in the tingling of your toes." That may seem like an awful lot to expect out of a simple roasted peach, but the combination of peaches, bourbon syrup, and smoked salt truly is sublime. Bitterman recommends using Maine apple smoked salt, which can be purchased at his salt shop, The Meadow. This recipe is one of many unique salt-accented recipes from Bitterman's book Salted, which you can win the electronic version of, along with a 32-gig iPad loaded with 75 e-cookbooks, if you enter our Holiday Cookbook Library iPad Giveaway.
