- 2 oz. Aperol
- 1 oz. lemon juice
- 1⁄2 oz. simple syrup
- 1⁄2 oz. egg white
- Grapefruit peel, for garnish (optional)
- Combine Aperol, lemon juice, simple syrup, and egg white in a cocktail shaker and shake vigorously. Add ice to cocktail shaker and shake vigorously again. Strain into a chilled cocktail glass and top with seltzer. Garnish with grapefruit peel, if using.
