Aperol has a lightly herbaceous and pleasant bittersweet orange flavor. This cocktail, from Cotogna restaurant in San Francisco, pairs it with lemon juice, seltzer, and egg white for a frothy drink that's perfect for brunch.

Ingredients

  • 2 oz. Aperol
  • 1 oz. lemon juice
  • 12 oz. simple syrup
  • 12 oz. egg white
  • Seltzer
  • Grapefruit peel, for garnish (optional)

Instructions

Step 1

Combine Aperol, lemon juice, simple syrup, and egg white in a cocktail shaker and shake vigorously. Add ice to cocktail shaker and shake vigorously again. Strain into a chilled cocktail glass and top with seltzer. Garnish with grapefruit peel, if using.
