It is amazing what a little oil and a lot of heat can do for asparagus.
Yield: serves 1-2
Time: 30 minutes
- 2 Tbsp. vegetable oil
- 1 lb. asparagus, trimmed and cut into 2-inch pieces
- Kosher salt
- Freshly ground pepper
- In a large skillet over medium-low heat, add the oil. When the oil is hot, add the asparagus and cook, stirring often, until blistered, evenly browned, and tender, 15–20 minutes. Season to taste with salt and pepper, and serve hot.
