Homemade simple syrup infused with the heady aroma of lavender makes a unique addition to refreshing spiked lemonade.
For the Simple Syrup
- 1 cup granulated sugar
- 1 cup water
- 1 1⁄2 tbsp. dried lavender buds
For the Cocktail
- 2 oz. gin
- 1 1⁄2 oz. lavender simple syrup
- 3⁄4 oz. lemon juice
- 1 dash club soda
Place dried lavender buds in a refillable tea bag or a mesh infuser. Bring water to a boil and add sugar, stirring until dissolved. Remove from heat, add lavender, and steep 30 minutes or up to 6 hours for stronger flavor.
Pour gin, simple syrup, and lemon juice into pint glass and stir. Top with club soda, garnish with lemon, and serve.
