Soy-Honey Marinade

This delicious marinade brings out lamb's natural sweetness.

Yield: makes 1/2 Cup


  • <sup>1</sup>⁄<sub>2</sub> cup soy sauce
  • <sup>1</sup>⁄<sub>3</sub> cup honey
  • <sup>1</sup>⁄<sub>4</sub> cup fresh lime juice
  • 3 Tbsp. Asian sesame oil
  • 3 Tbsp. minced ginger
  • 6 pods star anise
  • 2 chiles de árbol, stemmed and chopped
  • 2 cloves garlic, minced
  • 2 (1-lb.) lamb arm or blade chops


  1. In a bowl, whisk together soy sauce, honey, lime juice, sesame oil, ginger, star anise, chiles, and garlic.
  2. Rub marinade onto lamb and let marinate for 1 hour at room temperature or overnight in the refrigerator.
