Forget the name. A pizza stone is a fine baking surface for almost anything else, including flatbreads, vegetables, big roasts, and crisp-skinned chicken. Placing rocks over fire was one of the first indirect cooking methods, and its charms endure today. The capillary action of the porous stone wicks away excess moisture, creating great caramelization and char—no oil needed.
