Ochazuke (Green Tea Rice)

Japanese ochazuke is just white rice steeped in green tea, and yet it's so much more. Eat it alone for a gentle vegetal flavor, or add toasted nori, crumbled rice crackers, bonito flakes, or wasabi. This recipe appeared in the 2012 SAVEUR 100 with the story Ochazuke.

Ingredients

  • 1 12 cups short grain rice (can be sushi rice), rinsed
  • 2 cups cold water
  • 2 tbsp. sake
  • 1 tsp. matcha green tea powder
  • 1 tsp. salt
  • 2 tbsp. toasted sesame seeds

Instructions

Step 1

Place rice, water, sake, tea powder, and salt in a 4 quart saucepan and soak for 1 hour. Place over medium high heat and bring to a boil. Place a lid on the pot and turn the heat down to medium and cook 10 -15 minutes until rice is done. Let rest for 10 minutes and then fluff with a fork. Serve sprinkled with sesame seeds.
