At Nico’s Pier 38, Lyon-born chef Nico Chaize serves some of Oahu’s most creative drinks, like a citrusy marriage of cognac and Hawaiian vodka that he sweetens with passion fruit syrup. This recipe first appeared in the iPad edition of our October 2013 issue with the article A Toast to Paradise.
- 1 (3″-strip) lemon zest
- 1 oz. Hypnotiq French cognac
- 3⁄4 oz. vodka
- 1⁄3 oz. passion fruit syup, preferably Lilikoi Passion Fruit Syrup
- 2 oz. lemon-lime soda
- 1 rock candy swizzle stick, for garnish
- Twist and rub lemon zest around rim of a martini glass and drop into a martini glass. Combine cognac, vodka, and syrup in a cocktail shaker filled with ice. Shake vigorously and pour into glass; top with soda and garnish with rock candy stick.
