Salsa Fresca

Use peak season tomatoes for this simple salsa, then spill it over everything from burgers (this one is vegetarian) to omelettes.


  • 3 medium tomatoes, cored, seeded and finely chopped
  • 2 cloves garlic, minced
  • 14 cup red wine vinegar
  • 2 tbsp. finely chopped cilantro


Step 1

Mix vinegar, cilantro, tomatoes, garlic, and salt and pepper in a bowl. Cover with plastic wrap and let sit 20 minutes to allow flavors to marry.
