Planning Tips

  1. Make extra of the carrot and daikon pickle needed for the lotus stem salad—it keeps well and is great to have on hand for banh mi sandwiches or dipping sauces.

  2. The dipping sauce as well as the filling for both the rolls can be prepared the day before, just wait until ready to serve to assemble. To simplify the menu for a smaller crowd, choose just one of the rolls to serve.

  3. The pho takes almost four hours to prepare, so be sure to leave plenty of time for dinner preparation.
