Carciofi Arrostiti (Roasted Artichokes)

Though traditionally cooked in embers, these artichokes are equally as succulent when oven-roasted. This recipe appeared in our March 2011 issue as a part of our special feature, Soul of Sicily.

SERVES 8


1 1/2 cups olive oil
1 1/2 cup dry white wine
2 tbsp. dried oregano
2–3 tsp. crushed red chile flakes
12 cloves garlic, finely chopped
Kosher salt and freshly ground black pepper, to taste
6 globe artichokes, stemmed


Heat oven to 500″. In a medium bowl, whisk together oil, wine, oregano, chile flakes, garlic, and salt and pepper; set aside. Cut 1″ off top of each artichoke and gently pull leaves apart to open artichokes. Place them, standing up on their bases, in a small roasting pan or dish large enough to hold them in one layer. Pour oil mixture over each artichoke, making sure it reaches in between all leaves. Cover with aluminum foil, and bake for 45 minutes. Uncover, and bake, basting often with juices, until browned and tender, about 30 minutes more. Let cool for 10 minutes before serving warm with pan juices.

This is a tasty and easy method for artichokes. However, 2 to 3 tsp. crushed chili is way too much for even those that like chili heat. My advice is to scale it back to your own comfort level.

Was this ever delicious! An easy alternative to steamed artichokes. Didn't take as long to roast as indicated in the recipe.

I made these with baby artichokes because that's what was looking good at the market. They took only a half hour or so buried in the ashes of my fireplace in a cazuela and were plenty browned, even without being uncovered. I had cut them in half and there was no choke at all, so we could almost the whole thing. Awfully tasty and fun to make.

Carciofi are smoking up the neighborhoods right now in Sicily. The smell is awesome. I think they use a simpler recipe, but Im excited to try this one.
