Georgia Barbecue Sauce

This spicy blend of ketchup and mustard pairs well with smoked meats. This recipe first appeared in our June/July 2011 BBQ issue.

MAKES 3 CUPS

1½ cups apple cider vinegar
½ cup yellow mustard
½ cup ketchup
⅓ cup dark brown sugar
1 tsp. kosher salt
½ tsp. ground black pepper
¼ tsp. cayenne
2 cloves garlic

In a bowl, whisk together vinegar, mustard, ketchup, sugar, salt, pepper, cayenne, and garlic.

Being form Georgia I was intrigued and gave this one a shot. I used 1 cup of vinegar instead of 1 1/2 cups and found it to be nicely balanced. Georgia bbq has always seemed to be an eclectic mix of other bbq heavy hitters (Texas, Kentucky, Tennessee, Carolinas, etc). I would certainly say that this sauce sums up that sentiment. Thanks for a great (and very simple) sauce!!
