If you're visiting Charleston, South Carolina, be sure to go to the Glass Onion, an outstanding restaurant serving Lowcountry and New Orleans–style food. Before you even order your drinks, get a basket of the french fries with béarnaise sauce. The twice-fried potatoes are so perfectly crisp on the outside and soft on the inside that they'd be stars all by themselves, but the creamy, tarragon-rich béarnaise is the best dip imaginable for french-fried potatoes. —Rachel Levkowicz, Charleston, South Carolina
