Editor-in-Chief James Oseland shows us a simple and quick trick for cooking with lemongrass as an aromatic — no chopping or grinding required.
What you'll need:
A knife
A heavy object, like a coffee mug
How it works:
Cut off the bottom inch and very top of the lemongrass stalk.
Peel off the outermost layers.
Smash it gently with a heavy object until it's nice and splayed out.
Tie it into a nice, neat, nifty little knot.
Add your lemongrass knot to a coconut rice and the the flavor will be just fantastic.
This is so timely. I'm just about to harvest lemongrass from our garden to make Asian-style noodle soup. What a shame that I can't get the video to load in either Firefox OR Internet Explorer. (Cleared cache and still no luck) Good thing the description is quite clear.

Happily, I got the video to load by going directly to http://vimeo.com/30197805
Excellent! (I want the coconut rice now! But where to get lime leaves? Any ideas about what to use as a substitute? Would lime zest work?)
