Sauce Vinaigrette

MAKES ABOUT 1/2 CUP

The secret to this vinaigrette is the small amount of potato starch.

1 tbsp. boiling water
1 tsp. potato starch
2 tsp. dijon mustard
2 tbsp. red wine vinegar
6 tbsp. vegetable oil
Salt
Freshly ground black pepper
 

1. Whisk boiling water potato starch in a small bowl until smooth. Whisk in mustard and vinegar, then gradually drizzle in vegetable oil. Season to taste with salt and freshly ground black pepper, and continue whisking until vinaigrette is emulsified.
