Rossini Cocktail

A luscious take on the bellini, the Rossini swaps in strawberries for the latter drink's white peaches, and prosecco for champagne. Serve this versatile cocktail in place of mimosas at brunch, as an aperitif, or with dessert.

MAKES 1 COCKTAIL

INGREDIENTS

1 oz. puréed strawberries
3 oz. chilled prosecco
1 fresh strawberry, sliced, to garnish

INSTRUCTIONS

Pour strawberry purée into a chilled champagne glass, and top with prosecco. Garnish glass with fresh strawberry.
