How to Shape Dumplings

There's no reason to get stressed out when shaping pot stickers or other wonton-wrapped dumplings. In this video, SAVEUR contributing Editor Andrea Nguyen shows us some different ways to shape dumplings, starting with the simplest possible half-moon. And remember that no matter what your dumplings look like, they're going to taste fabulous in the end!

WHAT YOU'LL NEED

• round wonton wrappers
• dumpling filling

HOW IT WORKS

Lay out a few wrappers and brush on some water. Add a moderate amount of filling, placing the filling slightly off center and leaving a ½ to ¾-inch border around it. Now comes the fun part: What shape to make? Don't try to do something fancy at first. (But do work with the wrapper in your hand—you can see and control things a lot better.) Start out with a simple half-moon: Fold it in half and then seal it by pinching the edges together. For pot stickers, you want to make sure it will sit up in the skillet during cooking. To do this, sit the pot sticker on your work surface, and then make a little pleat in the top center, which will kind of look like a pea pod. Another cool shape you can make is a series of pleats all the way across, which will look kind of like a dinosaur's back.
