Caipirinha

MAKES 1

Some Brazilians substitute vodka for the fiery cachaça (sugarcane brandy) in this classic drink and call the result a caipiroska.

2 washed limes
2-3 tbsp. sugar
2-1 /1/2 oz. cachaça
ice

1. Cut 2 washed limes into sixths, put into a sturdy 14-oz. lowball glass, and add 2–3 tbsp. sugar.

2. Using a pestle or a small wooden spoon, muddle limes and sugar together. Add 2–2 1/2 oz. cachaça, fill glass with ice, and stir well. Serve garnished with a slice of lime.

I don't know, those brasilians like their sugar. Pretty sure it's TBSP. I also hear from a lot of Brasilians that they always take the skin off the limes to make the drink less bitter.

I usually press the cachaça with the limes, then add at least 6 tsp of sugar, mix well, and finally add crushed ice or those ice packs just for caipirinhas which make tiny ice balls. Always serve with a straw and to be a true brazilian, add a wooden spoon (we use wooden tiny spatulas topped with tropical birds) so that you can mix a bit while you are drinking....
Enjoy but be careful... this is a potent drink...lol
