Soy sauce, the most commonly used condiment in Chinese cooking, is made from fermented soybeans, wheat, salt, sugar, and yeast. Use dark, or thick, soy sauce to add color to braised dishes. It’s mild and slightly sweet. Use thinner, saltier, light soy sauce to add flavor in cooking, and as a base for dipping sauces.
