Fluffernutters, Without the Fluff

Warm, buttery bread laden with gooey fillings is all that you need to create the ideal comfort food. Grilled cheese is a flawless example, but I prefer my version of fluffernutters, the marshmallow-fluff sandwich. My marshmallow-less take on this treat calls for slathering slices of brioche with mascarpone cheese and peanut butter, topping them with sliced bananas, and sandwiching the two slices of brioche together. I brush the sandwich with butter and brown both sides in a hot frying pan. I like to gild the lily by dipping my adapted fluffernutter into a cup of melted semi-sweet chocolate chips or warm Nutella.

Ah, comfort: the next best thing since sliced bread.
