Popsicle Mania

There is a two-year old who lives downstairs from me who loves popsicles. He stashes them around the house (and garage) when no one is looking so he can get to them later. If you are wincing, that is my sentiment exactly.

For those of you who also have popsicle aficionados running around, young or old, making your own from scratch couldn't be simpler. You can sweeten them to your liking and also avoid the artificial colors and flavors you'll find in many commercially produced pops. Krystina Castella's honeydew melon pops are stunning, as are watermelon mint popsicles, these clever strawberry push pops, and these cherry kefir pops. And if you're in need of a bit of added flavor inspiration, there was a fantastic Los Angeles Times story on paletas a couple years back; there's a cucumber-chile paletas recipe at the end of the article. 101cookbooks.com
