Immersion Gin and Tonic

Vodka is transformed into an aromatic "gin" in this classic take on the iconic cocktail at New York's Betony. This recipe first appeared with the 2015 Saveur 100 item Sous Vide Spirits.

Ingredients

  • 12 oz. vodka
  • 10 coriander seeds
  • 8 juniper berries
  • 5 pieces dried lavender
  • 5 whole black peppercorns
  • 2 whole cardamom pods
  • 1 bay leaf
  • 6 oz. tonic, preferably Fever-Tree
  • 2 lime wedges

Instructions

Step 1

Set up an immersion circulator at 176° or heat a 4-qt. saucepan of water until an instant-read thermometer reads 176°. Combine vodka, coriander, juniper, lavender, peppercorns, cardamom, and bay leaf in a small plastic resealable bag; place in circulator for 90 seconds. Transfer bag to a bowl of ice water and massage bag to incorporate ingredients until chilled. Strain vodka through a fine-mesh sieve into an ice-filled highball glass with half the tonic; stir to combine. Squeeze 1 lime wedge over cocktail and drop into glass; top with remaining tonic and garnish with remaining lime wedge.
