Farro, a Versatile Grain

Farro is an endearingly nutty, chewy, and adaptable whole grain that I love to work into picnic and potluck-style salads. The only downside is that it can take a bit of time to cook (although pearled farro cooks faster). I'm always looking for new ways to work farro into my salads, and this insalata di farro con verdure al forno certainly caught my attention, as did Marian Burros's farro salad, and this one that uses broiled tomatoes.
