A refreshing, non-alcoholic version of the classic cocktail, this lime rickey offers up a bit of sweet cold lime heaven. This recipe was shared with us by Tyla Fowler from NYC’s Prune Restaurant.
- 1⁄2 lime, cut into quarters, plus 1 oz. fresh lime juice
- 2 1⁄2 tbsp. sugar
- 8 oz. club soda
- Place lime wedges and sugar in a pint glass and using a muddler or wooden spoon, crush and stir until sugar dissolves. Fill glass with ice, add juice and club soda, and stir to combine.
Variation: Add 1/8 tsp. kosher salt to the lime wedges and sugar before muddling for a Sweet-Salty Lime Rickey
