Prosecco Cocktail
A sweet and tart prosecco cocktail from Alba Huerta at Julep.
Yield: makes 1 cocktail
Time: 5 minutes

For the honey syrup:

  • 1 cup honey
  • 1 cup water

For the cocktail:

  • 1 oz. gin
  • 12 oz. fresh lime juice
  • 12 oz. pineapple juice
  • 12 oz. honey syrup
  • Prosecco, preferably Silvano Follador Valdobbiadene Prosecco Superiore
  • Fresh dill, to garnish

Instructions

  1. Make the honey syrup: In a small saucepan, combine the honey with the water and bring to a boil. Reduce the heat to medium and simmer the syrup for 5 minutes. Remove from the heat and let cool completely.
  2. Make the cocktail: In a cocktail shaker filled with ice, combine the gin with the lime and pineapple juices and honey syrup. Cover, shake vigorously, then strain into a chilled coupe. Top with prosecco and garnish with dill to serve.
