While the earliest versions of Bermuda’s national drink were whisked until frothy with a “swizzle stick,” a small branch or stem from the allspice bush, a cocktail shaker does the trick just fine.

Yield: makes 1 cocktail

  • 3 oz. dark rum
  • 1 oz. simple syrup
  • 1 oz. fresh orange juice
  • 12 oz. fresh lime juice
  • 2 dashes Angostura bitters
  • Club soda, to top
  • Orange slice, to garnish
  • Maraschino cherry, to garnish

  1. Combine rum, simple syrup, orange juice, lime juice, and bitters in a cocktail shaker over ice. Shake well, and strain into a collins glass with fresh ice. Top with club soda. Garnish with an orange slice and a maraschino cherry.
