These crumbly powdered sugar coated cookies made with chopped pecans are often served at Southern weddings.
Yield: makes ABOUT 4 DOZEN
16 tbsp. unsalted butter, softened
6 tbsp. plus 1 cup confectioners' sugar
1 3⁄4 cups flour
2 cups finely chopped pecans
1 tsp. vanilla extract
Heat oven to 275°. Using a hand mixer, whip butter and 6 tbsp. sugar in a bowl until fluffy. Slowly add flour; beat until combined. Stir in pecans and vanilla. Shape dough into 3⁄4" balls; place on parchment paper-lined baking sheets. Bake, rotating sheets halfway, until cookies are set, 25–30 minutes. Transfer cookies to a wire rack; let cool. Place remaining 1 cup sugar in a shallow dish; roll cookies in sugar until completely coated.
