Cucumber Agua Fresca
Fresh ginger and plenty of lime make this drink extra refreshing.

Making this frosty, palate-cleansing cucumber cooler from Brooklyn’s Pies ’n’ Thighs couldn’t be easier. Peeled cucumbers are puréed with water and fresh ginger, then strained through cheesecloth and rounded out with a touch of lime juice. It’s the perfect antidote to a hot day.
Ingredients
- 5 medium cucumbers, peeled and coarsely chopped
- One 1½-in. piece fresh ginger, coarsely chopped
- ½ cup fresh lime juice
- ¼ cup simple syrup

- In a blender or food processor, purée the cucumbers, ginger, and 4 cups of cold water on high. Line a strainer with cheesecloth and place over a medium bowl, then pour the mixture through it. Discard the solids. Stir in the lime juice and simple syrup. Serve in rocks glasses over ice.
