Celery and Blue Cheese

Serve this tasty salad well chilled.

Yield: serves 4


  • 8 ribs celery, trimmed
  • 4 oz. Maytag or other good blue cheese, crumbled
  • 2 tbsp. extra-virgin olive oil
  • Salt and freshly cracked black pepper


  • Cut celery ribs crosswise into 1⁄2'' pieces, transfer to a bowl, add cheese, oil, a little salt and freshly cracked black pepper. Gently toss.
