Yield: serves 4
- 8 ribs celery, trimmed
- 4 oz. Maytag or other good blue cheese, crumbled
- 2 tbsp. extra-virgin olive oil
- Salt and freshly cracked black pepper
- Cut celery ribs crosswise into 1⁄2'' pieces, transfer to a bowl, add cheese, oil, a little salt and freshly cracked black pepper. Gently toss.
