Pickled Herring

MAKES 8 PICKLED FILETS

Use salted (brine-packed) herring filets for this recipe.

**8 salted herring filets
1 cup white vinegar
2 cups sugar
5 white peppercorns
2 bay leaves **

1. Soak salted herring filets in a bowl with 1 quart cold water for 3 hours. Drain and set aside.

  1. Meanwhile, combine vinegar, sugar, 3 cups water, white peppercorns, and bay leaves in a medium pot. Bring to a boil, then set aside to cool.

  2. Pour vinegar mixture over herring, cover with plastic wrap, and refrigerate for 3 days. While the herring can be eaten as is, it is common in Denmark to go one step further and flavor the fish with ingredients such as cloves or curry powder. Remove bay leaves before eating.
