Sauce Vinaigrette

The secret to this vinaigrette is the small amount of potato starch.

  • 1 Tbsp. boiling water
  • 1 tsp. potato starch
  • 2 tsp. dijon mustard
  • 2 Tbsp. red wine vinegar
  • 6 Tbsp. vegetable oil
  • Salt
  • Freshly ground black pepper

Step 1

Whisk boiling water potato starch in a small bowl until smooth. Whisk in mustard and vinegar, then gradually drizzle in vegetable oil. Season to taste with salt and freshly ground black pepper, and continue whisking until vinaigrette is emulsified.
