Charles Joly of Chicago's Aviary bar gave us the recipe for this fresh approach to ginger beer. Ginger root is peeled, cubed, and then juiced in an electric juicer to create the spicy, intense base to which lime juice, simple syrup, and soda water are added. Along with your favorite spirit, it makes a wonderfully aromatic, charismatic cocktail.
- 1 oz. fresh lime juice
- 1 oz. simple syrup
- 1⁄2 oz. fresh ginger juice
- 6 1⁄2 oz. sparkling water, preferably Gerolsteiner
