No-Bake Chocolate-Oat Cookies

Yield: makes about 50 cookies

Ingredients

  • 2 cups granulated sugar
  • 8 tbsp. unsalted butter
  • 12 cup cocoa powder
  • 12 cup milk
  • 3 cups quick-cooking oats
  • 1 cup finely chopped walnuts or pecans
  • 1 tsp. vanilla extract

Instructions

  1. Bring sugar, butter, cocoa powder, and milk to a boil in a 4-qt. saucepan. Cook until sugar is dissolved and butter is melted, about 2 minutes. Remove from heat; stir in oats, walnuts, and vanilla extract. Using a 1-oz. scoop or 2 tablespoons, drop cookies onto a waxed paper-lined baking sheet; chill until firm, about 10 minutes.
