In addition to using caraway and dill—the most traditional flavors for aquavit—in Sweden, home cooks make the spirit with an infinite variety of spices, herbs, and other flavorful botanicals. One infused with peaches and anise pairs wonderfully with peach purée for a Swedish twist on a bellini from Manhattan’s Restaurant Aquavit.
For the Peach and Anise Aquavit
- 2 medium peaches, peeled and sliced
- 1 star anise
- 1 (750-ml) bottle vodka
For the Cocktail
- 1⁄2 oz. peach and anise aquavit
- 1⁄2 oz. peach purée
- Sparkling wine, to top
- Make the aquavit: Combine peaches with vodka and steep for 4 weeks; add 1 star anise and steep for 1 more week. Strain.
- Combine aquavit and purée in a champagne flute; top with sparkling wine.
