Food Processor Pasta Dough
Get by with a little help from your appliances. Pasta dough comes together at lightening speed with the use of one of your fancy kitchen gadgets. Roll and fill it with springy pea and ricotta filling for ravioli worthy of a garden party.
Yield: serves 4-6
Time: 20 minutes
- 2 cups flour, plus more for dusting
- <sup>1</sup>⁄<sub>2</sub> tsp. kosher salt
- 4 eggs
- Mix flour and salt in a food processor. With the motor running add eggs until dough forms. Transfer dough to a lightly floured surface; knead until dough is elastic, 8–10 minutes. Transfer to a greased bowl and cover with plastic wrap; refrigerate 30 minutes.
