Jeffrey Morgenthaler of Portland’s Clyde Common adds a tropical spin to a classic brandy sour cocktail with Jamaican rum and fresh citrus.

- 1 oz. cognac
- 1 oz. Jamaican rum
- 1⁄2 oz. fresh lemon juice
- 1⁄2 oz. orgeat
- Lemon twist, for garnish
- Combine cognac, rum, lemon juice, and orgeat in a cocktail shaker filled with ice; shake vigorously, then strain into a Nick-and-Nora glass. Garnish with a lemon twist.
