This recipe for a modified Dark and Stormy comes to us from the Cliff Restaurant in Barbados. The addition of fresh ginger juice to the drink provides a kick of clean heat for an especially invigorating cocktail.
- 2 oz. Mount Gay Black Barrel rum
- 1 oz. freshly squeezed lime juice
- 1 oz. simple syrup
- 1 oz. fresh ginger juice (blend clean ginger root with the same amount of water, then strain through a cheese cloth)
- Good-quality ginger beer
