This sweet, thick, soy sauce is spiked with chiles and shallots. This recipe first appeared in our May 2011 issue, with the article The World of Satay.

Yield: makes about 1 cup

Ingredients

  • 34 cup kecap manis (sweet soy sauce)
  • 3 tbsp. fresh lime juice
  • 10 red Thai chiles, sliced thin
  • 4 Kaffir lime leaves, stemmed, very thinly sliced crosswise
  • 3 shallots, very thinly sliced

Instructions

  1. Stir together kecap manis, lime juice, chiles, lime leaves, and shallots in a bowl; let sit 30 minutes.
