Throughout India, creamy, chilled lassis are the go-to beverage for cooling off during the warmer months. To make them, milk or water-thinned yogurt is blended with ingredients such as ripe mangoes or, as in this recipe, rose water and strawberries. Strawberry Lassi
Thinned yogurt is blended with rose water and ripe strawberries in this creamy chilled lassi recipe.
Yield: serves 2-4

Ingredients

  • 2 cups plain, full-fat yogurt
  • 1 cup ice cubes
  • 12 cup whole milk
  • 14 cup sugar
  • 12 tsp. rose water
  • 10 strawberries, hulled, plus slices for garnish
  • Vanilla ice cream or heavy cream, for topping (optional)

Instructions

  1. Purée yogurt, ice, milk, sugar, rose water, and strawberries in a blender until smooth. Pour into glasses and top with 1–2 tbsp. ice cream or heavy cream if you like; garnish with sliced strawberries.
