Strawberry Lassi

Throughout India, creamy, chilled lassis are the go-to beverage for cooling off during the warmer months. To make them, milk or water-thinned yogurt is blended with ingredients such as ripe mangoes or, as in this recipe, rose water and strawberries. This recipe first appeared in the tablet edition of our August/September 2014 special India issue.

Ingredients

  • 2 cups plain, full-fat yogurt
  • 1 cup ice cubes
  • 12 cup whole milk
  • 14 cup sugar
  • 12 tsp. rose water
  • 10 strawberries, hulled, plus slices for garnish
  • Vanilla ice cream or heavy cream, for topping (optional)

Instructions

Step 1

Purée yogurt, ice, milk, sugar, rose water, and strawberries in a blender until smooth. Pour into glasses and top with 1–2 tbsp. ice cream or heavy cream if you like; garnish with sliced strawberries.
