Dominican Herb and Lime Sauce (Wasakaka)

Wasakaka is similar to Argentina's chimichurri. With just four ingredients, wasakaka is one of the simplest Caribbean condiments there is, and it's almost always served with roasted and grilled chicken.


  • 12 cup fresh lime juice
  • 12 cup finely chopped flat-leaf parsley
  • 14 cup extra-virgin olive oil
  • 2 cloves garlic, minced
  • Kosher salt and freshly ground black pepper


Step 1

In a medium bowl, mix all ingredients with 1⁄2 cup water and season with salt and pepper. Store in an airtight container for up to 3 days.
