Wasakaka is similar to Argentina’s chimichurri. With just four ingredients, wasakaka is one of the simplest Caribbean condiments there is, and it’s almost always served with roasted and grilled chicken.
- 1⁄2 cup fresh lime juice
- 1⁄2 cup finely chopped flat-leaf parsley
- 1⁄4 cup extra-virgin olive oil
- 2 cloves garlic, minced
- Kosher salt and freshly ground black pepper
- In a medium bowl, mix all ingredients with 1⁄2 cup water and season with salt and pepper. Store in an airtight container for up to 3 days.
